Honey and Honey Varietals

The bee is a real miracle of nature. It has survived 70 million years without any evolutionary change. Today we know that pollinators help to produce one third of the world’s food crop production and that the major part of pollination is carried out by bees which consistently gather pollen. Let’s never forget: bees are of crucial importancefor our survival. 

Honey

Honey is a sweet and viscous fluid made by bees using nectar from flowers or from honeydew extracted by some insects. It is a perfect product of nature since it contains almost all the components that form a human organism.

Honey has been appreciated since ancient times, ages ago it was called “Liquid Gold” and “Food and Nectar for Gods”. Aristotle, a very important philosopher from ancient Greece, wrote: “Honey falls down from the sky, mainly when the stars come out«. Even before, in ancient Egypt people thought Honey came out of the tears of the God Ra. By all means, Honey is a perfect product of nature, it has numerous healing and relaxing effects on human body and we could say that it is an irreplaceable alimentation for human beings. 

The main substances of Honey are monosaccharides (fructose 40 %, glucose 34 %) and sucrose (up to 4 %) which make Honey a beneficial source of energy and easily digestible. Honey contains a lot of water (15 ‒ 20 %) and vitamins (B complex, vitamin C, pantothenic acid, folic acid) important in periods of increased physical activity, growth, illness, pregnancy, and breast-feeding. It also contains enzymes (help to efficient nutrition), minerals (help to digest properly), hormones (they control many bodily functions), amino acids, antibacterial substances etc. In one kilogram of Honey there are about 980 mg free amino acids.    

Because of the antimicrobial characteristics (low moisture, high in sugar), Honey contains only a minimal number of microorganisms produced by the “production process” i.e. the bee digestion, or by contamination from the surroundings. However, Honey sometimes contains dormant edospores of the bacterium Clostridium botulinum, which can be dangerous to infants, as the endospores can transform into toxin-producing bacteria in the infant's immature intestinal tract, leading to illness and in worst cases even death. That is why Honey should not be given to babies less than one year old.     

Honey Varietals

Milleflori
Milleflori” (thousand flowers), also called Wildflower Honey is the most common type of Honey and also the rarest: made of nectars from flowers in a particular place at a particular time, it is impossible to reproduce its unique colour, aroma and flavours from year to year. There are different varietals of Honey that depend mainly on the flowers consumed by the bees that have produced it. Sometimes it is impossible to tell the exact plant from which a certain Honey was made. Based on the taste and aroma we can estimate the presence of a specific flower and its beneficial characteristics. When it is impossible to tell from which flowers the Honey was made we label it Millefiori

Acacia Honey
This honey varietal is one of the most popular in Slovenia and around the world. It has a mild sweet floral flavour and it is very pale yellow and very liquid. Acacia Honey is slow to crystallize. This means that it can remain in a liquid state for a long period of time due to its high concentration of fructose. In spite of its sweetness, Acacia Honey has very low sucrose content and a high fructose level, so it is the best choice for diabetics. Known for its therapeutic qualities, Acacia Honey cleanses the liver, helps the kidneys, relieves the stress and it has got anti-inflammatory effects on the respiratory system due to its antibacterial properties ‒ another benefit of Honey. It is highly recommended for children because it does not contain a lot of pollen, it has a lot of beneficial effects and it tastes good. Besides, its nice aroma and mild flavor stimulate appetite. 

Lime-Tree Honey
The source for Lime-Tree Honey can be honeydew or flowers. Its colour varies from light yellow to light amber. It has a typical flavour and aroma that can be easily recognized. It crystallizes very quickly, especially in a cold environment. Lime-Tree Honey is very rich in vitamins (especially B1, also known as thiamin), amino acids, pollen and resin. Among others, it has antiseptic properties and thus it is used to cure colds, flu, cough and bronchitis. Lime-Tree Honey dissolves the mucus and cleans the throat. It is highly recommended for people suffering from stress and insomnia. A bit of Lime-Tree Honey is better than any sleeping pill. Lime-tree Honey also has anti-germs and anti-inflammatory properties. 

Dandelion Honey
Similarly to Lime-Tree Honey, the colour of Dandelion Honey varies from light yellow to dark amber. It comes from flowers and it has a strong flavour and aroma. It crystallizes very quickly. It is used mainly for invigoration, since it gives us a lot of energy. Dandelion Honey is famous for its diuretic properties ‒ it helps water secretion, relieves cystitis and other urinary tract inflammations. 

Forest Honey
Forest Honey consists of a mixture of honeydew and that makes its every single varietal very unique. Varietals of Forest Honey can differ in scent, flavour, colour and aroma. It is not particularly sweet, rather it has a balanced bitter-sweet taste. Often it is confused with Millefiori Honey, but Forest Honey tastes a bit bitterer, has a stronger aroma and a darker colour. Forest Honey also differs from other honey varietals because of its chemical structure (it contains a lot of minerals) and its source (bees produce it out of honeydew gathered from twigs and leaves of different deciduous- and coniferous trees). Due to its high mineral content it strengthens the heart and blood vessels and increases levels of haemoglobin in blood. Known for its therapeutic qualities the use of Forest Honey is recommended after difficult surgeries and during pregnancy. It also relieves urinary and other inflammations. 

Chestnut Honey
Chestnut trees are very important for bees since they offer them a lot of honeydew and pollen. Chestnut Honey is dark red-brown and has an intense and bitterly aroma. It is used for pastry and biscuits. Chestnut Honey has many beneficial effects and it relaxes organism. It is recommended for treating intestinal problems, it relieves the overwork of the liver and the gall and protects the stomach and the intestine mucous membrane. It is recommended to take Chestnut Honey in camomile-, hip- and thyme tea.  However, it is important to keep in mind that the Honey obtained from wild chestnuts can increase your blood pressure.

Fir Honey
Fir Honey is a special varietal of Honey, not so common in Slovenia.It has a particular flavour, it is dark and typically viscous. It contains a lot of calcium and other minerals that benefit human organism. It is used as a supplement to cure cough, bronchitis and other pulmonary diseases. Fir Honey has almost no smell, but it tastes mild and good. Above, only the most typical Slovenian varietals of Honey are presented. In Slovenia, also Spruce Fir Honey, Apple Honey and Cherry Honey are produced. Slovenia is very rich in Honey and its great varietals meet every taste.
